Lemony Steamed Asparagus

Sometimes, the simplest things are the best. I like asparagus with a drizzle of balsamic vinegar and lemon zest but, if I’m serving it alongside something with a lot of flavor, I keep it pretty plain. A little salt and lemon are really all you need to let the flavor of the asparagus shine. Even a drizzle of extra virgin olive oil of good quality could be just the finishing touch it needs.

Lemony Steamed Asparagus

Ingredients

Scale
  • 1 bunch asparagus, trimmed but left long
  • 1 Zest of one lemon
  • Salt, to taste

Instructions

  1. Place asparagus in a large skillet with straight sides and a cover that fits perfectly
  2. Fill up with water to just about half-way up first layer of spears.
  3. Bring to a boil over medium heat, then lower to simmer and cover.
  4. Spears are done with they are just-tender.
  5. Plunge into an ice bath to keep the beautiful color orserve immediately with a sprinkle of salt and lemon zest (or optional balsamic and/or olive oil).
