Easter Brunch

Spring is here and, with it, comes Easter! Now, I’ll be honest: my favorite part about any holiday is the food and Easter is no different. The baked goods, the fresh veggies and fruit, the abundance of it all. All yum. And all clean-eating, of course

For this Easter, I have prepared some simple and easy dishes, which can be made together or pick and choose your favorites. Almost all of these dishes can be made the day before, reducing your Easter- morning kitchen time. Whatever you choose, I hope you have a wonderfully relaxing day, filled with friends and family (even if they’re on Zoom).

 

Menu:

Paleo Strawberry Lemonade

Mixed Berry Muffins

Steamed Asparagus with Lemon

Roasted Mini Potatoes

Zucchini, Tomato and Onion Quiche

Poached Salmon with Herbs

 

Notes:

  • For a simpler meal, you could make one of the mains (quiche or salmon) with a salad and some fresh fruit.
  • I always make the baked goods the weekend before and freeze them in gallon-sized freezer bags so I don’t have too much going on the weekend of the big event.
  • If you didn’t want to make the quiche crust, go crustless! You could cook it in a skillet and flip, turning it into a frittata (you wouldn’t need the flour if you did that) or put it into silicone muffin tins for mini crustless quiches.
  • The only one of the above dishes that I would serve right after cooking is the potatoes, as they are best warm. Having said that, you could roast them the day before and reheat, just know that they won’t be ask crispy as they would be right out of the oven.
