Poached Salmon with herbs

Poached Salmon with Herbs


Ingredients

Scale
  • 1 ½ Lb Side of Salmon
  • 2 Cups water or vegetable broth
  • ¼ Cup white wine
  • Salt to taste
  • Herbs of choice (I used parsley and thyme, though dill would work as well)
  • Lemon slices, for garnish

Instructions

  1. Heat oven to 400-degrees and oil a large baking pan or line with parchment. Lay salmon skin-side down on pan and pour water/broth and wine on top.
  2. Layer some of the herbs on top and cover pan with parchment, then foil, being sure to seal.
  3. Cook for 20 minutes or so, checking for doneness. Takeout of oven when done, remove cover and allow to cool.
  4. Carefully move to a serving platter and garnish with additional herbs and lemon. Enjoy warm or cold.
