If you’re in the mood to grill, just toss these with avocado oil and salt, put in a grill basket and cook until golden-brown.

Ingredients

  • 1 Lb fingerling or baby potatoes, halved
  • Avocado oil
  • Salt, to taste

Instructions

  1. Heat oven to 425-degrees and line two baking pans with parchment paper
  2. Toss potatoes with enough avocado oil to coat and salt to taste.
  3. Place potatoes cut-side down and bake approximately 25 minutes,switching pans half-way through, until the are golden brown on the bottom
