Poached Salmon with Herbs
Ingredients

- 1 ½ Lb Side of Salmon
- 2 Cups water or vegetable broth
- ¼ Cup white wine
- Salt to taste
- Herbs of choice (I used parsley and thyme, though dill would work as well)
- Lemon slices, for garnish
Instructions
- Heat oven to 400-degrees and oil a large baking pan or line with parchment. Lay salmon skin-side down on pan and pour water/broth and wine on top.
- Layer some of the herbs on top and cover pan with parchment, then foil, being sure to seal.
- Cook for 20 minutes or so, checking for doneness. Takeout of oven when done, remove cover and allow to cool.
- Carefully move to a serving platter and garnish with additional herbs and lemon. Enjoy warm or cold.
