Decadent Chocolate-Caramel Waffles

Waffle Ingredients
- 2 Cups Paleo Pancake/Waffle Mix ((I used Birch Benders))
- 1 1/2 Cup Water
- 2 2/3 TB Coconut Oil, melted
Caramel Sauce Ingredients
- 1/4 Cup Almond Butter
- 1/4 Cup +2 TB 100% Pure Maple Syrup
- 1 tsp Vanilla
- Pinch Salt
Chocolate Sauce Ingredients
- 1/2 Cup Dairy-free, Refined Sugar-Free Chocolate Chips ((I use Lily’s brand))
- 1 TB Coconut Oil (+ more depending on how thin you like it)
Additional Toppings (optional)
- Berries of choice
- Sliced bananas
- Dairy-free, Refined Sugar-Free Chocolate Chips ((I use Lily’s brand))
- Coconut Whipped Cream (see Note 2)
Instructions
- Mix waffle ingredients and cook according to waffle maker instructions (see Note 1)
- Place all caramel ingredients in a small blender and puree until smooth. If too thick, add some melted coconut oil and/or heat it up until it is pourable.
- Place chocolate chips and coconut oil in a glass measuring cup or small microwavable bowl and heat in microwave for 30-second increments (stirring in between), until chips are melted. Feel free to add more coconut oil to make it thinner.
- Serve waffles drizzled with chocolate and caramel sauces and top with desired additional toppings. Enjoy!

Note 1 : Waffle ingredients were based on using the Paleo Birch Benders brand. If you are using another brand of pancake or waffle mix, you will want to follow the instructions given on that product.
