Roasted Acorn Squash

This is the easiest side dish you will ever make!  And it’s delicious.  And good for you.  And, you can slice ahead and roast when ready to serve.  So, you know, an all-around winner.  Enjoy!

Roasted Acorn Squash

Ingredients

Scale
  • 2 Acorn Squashes, sliced 1/1 – 1/2-inch thick
  • Avocado Oil, to coat
  • Salt + Pepper, to taste

Instructions

  1. Preheat oven to 425-degrees and line two baking pans with parchment paper
  2. Coat squash slices with oil and season with salt and pepper, to taste
  3. Bake 25 minutes or until golden, flipping half-way through
