Pumpkin Waffles with Apple-Cinnamon Compote

Description

Pumpkin, Apples, Cinnamon…can you tell it’s Autumn?!  I absolutely LOVE the combo of pumpkin-y baked goodness with sautéed apples and cinnamon.  It has got to be one of the BEST flavor combinations in the world!  If you have some time, I would highly recommend putting together the “from scratch” version but, if you’re pressed, you can certainly use a GF waffle mix for the base (adding in some pumpkin purée, if desired) and top with the apple-cinnamon compote.  Still delish!
And if you happen to have some coconut whip to dollop on the top, it couldn’t hurt 😉.  Happy harvest!

Apple Cinnamon Compote

  • 4 Large Apples, thinly sliced
  • 1 Lemon, juiced
  • 1 TB Cinnamon ((plus more, to taste))
  • 2 TB Coconut Oil

Instructions

  1. Preheat waffle maker.
  2. Lightly grind half of oats in a spice grinder or blender and mix with remaining dry ingredients (oats through nutmeg).
  3. In another bowl, combine wet ingredients (yogurt through salt) and stir until well combined.
  4. Dump dry ingredients into wet and mix until just combined. Add a little more DF milk if too dry or thick.
  5. Cook according to waffle maker instructions.
  6. Serve with apple-cinnamon compote and optional whip and syrup. Enjoy!

Apple Cinnamon Compote

  1. Toss apples, lemon juice and cinnamon until well combined.
  2. Heat coconut oil in a pan over medium-low heat and sauté until desired level of softness or crispness (mine took about 10 minutes).
