Sunday night is fish night in our house and, as the weather warms up, it’s all about the easy grillin’. We love this Grilled Salmon Salad because it is a light, yet filling, meal that leaves you refreshed and keeps its cool.
Why Salmon Is So Good For You
- You may have heard that salmon is full of Omega 3 Fatty Acids, which many of us don’t get enough of. Omega 3’s help us maintain healthy skin, lower cholesterol and the risk of heart disease, and reduce inflammation, which can lead to chronic diseases
- It is high in B vitamins! One serving of salmon can have up to 50% of the recommended daily allowance of certain B vitamins. That’s important because the B vitamins promote a healthy metabolism and have been linked to a reduced risk of stroke.
- It’s also high in Vitamins A, C, D, E, and niacin. Look at you, getting your vitamins from natural food sources!
- It’s an excellent protein source that is low in saturated fats and calories (if you’re counting)
A Note About Quality
Although you can find salmon year-round, I prefer to buy it when it is fresh and wild. Why? Well, for one thing, farmed salmon is raised in pens which means they are often fed antibiotics to keep them from getting sick – and that ends up on your plate! For another, they are often dyed to get that salmon-colored look. What about frozen, you may ask? If you don’t mind the taste of frozen salmon, getting wild that has been frozen is a good alternative. Personally, I find frozen has a “fishy” taste but my husband doesn’t notice it at all so, if you don’t either, this may be a great option for you.

This salmon salad is a quick-and-easy summertime meal. Delicious and a definite crowd-pleaser, it’s as much a hit for casual dinners as it is for an elegant feast!
Ingredients
- 1 1/2 lbs Salmon ( I like to have mine in one long piece.)
- 3 tbsp Light coconut sugar
- 1 tbsp Ground cumin
- 1 tsp Chili powder (Less if you are spice-averse.)
- 1 tsp Salt
- 1 tsp Black pepper
- 8 oz Salad mix, chilled
- 1/4 cup Sliced green onions (White and pale green parts.)
- 1/4 cup Pine nuts
Tomato Vinaigrette
- 1 cup Halved cherry tomatoes
- 1/4 cup Red wine vinegar
- 2 tbsp Extra-virgin olive oil
- 1 tbsp Minced shallot
- 1/2 tsp Dry mustard
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
Instructions
- Rinse and dry salmon
- Mix coconut sugar, cumin, chili powder, and 1 teaspoon salt and pepper in a small bowl
- Place salmon on grill pan and rub with spice mixture
- Grill salmon at 400-degrees for 18 minutes, or until desired level of doneness
- While salmon is cooking, mix items for tomato vinaigrette
- Divide salad mixture and salmon over 4 plates and dress with vinaigrette, onions, and pine nuts
