- 1 ½ Cups Non-Dairy Milk
- 2 Flax Eggs (2 TB ground flaxmeal with 6 TB warm water, sit for 10–15 mins to gel)
- ½ Cup 100% Pure Maple Syrup
- 1 TB Coconut oil, melted
- 2 tsp Vanilla extract
- 1 tsp Baking powder
- 1 tsp Ground cinnamon
- ¼ tsp Salt
- 3 ½ Cups Old-fashioned gluten-free oats
- 1 Cup halved grapes + extra for garnish
Instructions
- Preheat oven to350-degrees
- Oil a muffin pan well or use a silicone muffin “pan”
- Whisk wet ingredients (milk through vanilla) in a large bowl. Stir in dry ingredients (baking powder through oats) until well combined. Add in 1 cup of grapes and incorporate into the mix.
- Divide batter evenly into muffin cups and garnish with additional grapes.
- Bake for approximately 20 minutes or until set
