Description
This compote can be used in soooo many ways, it will make your heart sing! Or your taste buds. From yogurt-granola parfaits to ice cream sundaes, the sky’s the limit! And, at only 62 calories per ¼ cup serving, it is guilt-free, as well. Enjoy!
Ingredients

- 4 cups Cherries (pitted)
- 1/4 cup Water
- 1/4 cup Maple Syrup
- 1 pinch Sea Salt
- 1/2 tsp Cinnamon
- 1 tsp Arrowroot Powder
- 2 tsps Water
- 1 tsp Vanilla Extract
Instructions
- Combine 1/4 cup each of water and maple syrup in a medium pot along with the pinch of salt and bring to a simmer of high heat.
- Add cherries and cinnamon, stir, cover, and reduce heat to low. Cook until cherries become soft and start to break down (15-20 mins).
- Meanwhile, combine arrowroot and 2 tsps water in a small bowl and stir with a fork until dissolved. Once cherries have started to break down, drizzle in arrowroot and stir constantly until the mixture has thickened (about 5 mins). Remove from heat and stir in vanilla.
- Once cooled, transfer to a large jar (or jars) to refrigerate or freeze. If freezing, leave room for the mixture to expand. Enjoy over yogurt, ice cream, on waffles, on toast or just about anywhere!
Notes
- You can make this year-round with frozen cherries! Just reduce the liquid to 2 TB water and 2 TB maple syrup. Cooking time will only be about 5 minutes.
- For a thicker compote, dissolve 1 TB arrowroot in 2 TB water and add as directed.
- Recipe makes about 2.5 cups, so each serving is about 1/4 cup.
