Double Chocolate Protein Waffles

Anytime is a good time for chocolate–amiright?? With these clean-eating protein waffles, you’ll get your chocolate fix AND feel great! If I were you, I’d double the recipe and freeze the rest (double-bagged, parchment between layers) ‘cuz you’re gonna want them during the week! #truth #kidapproved

Double Chocolate Protein Waffles


Ingredients

Scale
  • 1 3/4 cup Oats (120 grams)
  • 2 scoops  Vanilla protein powder (I use Arbonne)
  • 1/4 cup Cacao (a more anti-oxidant rich version of cocoa powder)
  • 2 Flax eggs (2 TB flaxmeal mixed with 6 TB hot water, sit for 1015 mins)
  • 1 1/4 Non-dairy milk of choice
  • 2 tbsp Maple syrup
  • 1 tbsp Vanilla
  • Pinch of salt
  • 1/41/2 cup Vegan, Sugar-free Chocolate Chips (I use Lily’s)
  • Coconut whipped cream for serving ((see recipe notes))

Instructions

  1. Make flax eggs (see above)
  2. Heat waffle iron (make sure waffle iron is hot enough or these will stick!)
  3. Mix all ingredients through salt in a blender until smooth
  4. Mix in chocolate chips (or sprinkle on top of batter once in waffle maker)
  5. Cook according to waffle iron instructions
  6. Serve with desired toppings and enjoy!
