When I asked my husband what he wanted for dessert this weekend, he said, “Have you made those Almond Butter Chocolate Chip Bars for the blog, yet?” Well, my friends, I had not so here you go!
We love a little something sweet after a meal and these bars are just the thing. We make ours with less coconut sugar so that they’re not overly sweet, which is perfect for us. They come together pretty quickly by creaming the wet ingredients, then adding the (previously combined) dry. Pop these puppies in the oven and, 20 minutes later, you have dessert! Or snack. Or breakfast. Or, really, anytime because they are healthy: protein, oats, fiber…these are WAY better than those sugary cereals or breakfast bars for SURE! And, no, they do not taste like cardboard (ye of little faith…). They taste like a peanut butter chocolate bar that spent a weekend at the spa – you know, getting rejuvenated and coming out a better person, erm, bar. Well, you get the idea 😊

Need an easy, crowd-pleasing treat? These Almond Butter Oatmeal Chocolate Chip bars are wholesome, yet delicious! Make sure you have plenty ‘cuz they go fast!
Ingredients
- 1/2 cup Coconut sugar
- 1 cup Almond (or other nut) butter
- 2 tsp Vanilla extract
- 1 1/4 cup Gluten-free oat flour
- 1/4 cup Gluten-free rolled oats
- 1 1/2 tsp Baking powder (pref. aluminum-free)
- 1/4 tsp Salt
- 1/4 cup Unsweetened non-dairy “milk” (add an extra 2 tablespoons)
- 1/2 cup Sugar-free, dairy-free dark chocolate chips + extra for topping
Instructions
- Preheat oven to 350-degrees. Line a 9-inch pan with parchment (could use 8-inch if you like thicker bars) and set aside.
- In a mixer (or large bowl using a hand-held mixer), cream coconut sugar, almond butter and vanilla until well blended.
- In another bowl, combine oat flour, oats, baking powder and salt.
- While mixer is off, add dry ingredients to the mixing bowl, then add “milk” to coat. Mix slowly until just combined. Add chocolate chips and stir until evenly distributed.
- Press mixture into prepared pan and top with extra chocolate chips.
- Bake 20 minutes or so (more if using smaller pan), until a toothpick inserted into the center comes out mostly clean.
- Enjoy!
