Need an easy, crowd-pleasing treat? These Almond Butter Oatmeal Chocolate Chip bars are wholesome, yet delicious! Make sure you have plenty ‘cuz they go fast!

- 1/2 cup Coconut sugar
- 1 cup Almond (or other nut) butter
- 2 tsp Vanilla extract
- 1 1/4 cup Gluten-free oat flour
- 1/4 cup Gluten-free rolled oats
- 1 1/2 tsp Baking powder (pref. aluminum-free)
- 1/4 tsp Salt
- 1/4 cup Unsweetened non-dairy “milk” (add an extra 2 tablespoons)
- 1/2 cup Sugar-free, dairy-free dark chocolate chips + extra for topping
Instructions
- Preheat oven to 350-degrees. Line a 9-inch pan with parchment (could use 8-inch if you like thicker bars) and set aside.
- In a mixer (or large bowl using a hand-held mixer), cream coconut sugar, almond butter and vanilla until well blended.
- In another bowl, combine oat flour, oats, baking powder and salt.
- While mixer is off, add dry ingredients to the mixing bowl, then add “milk” to coat. Mix slowly until just combined. Add chocolate chips and stir until evenly distributed.
- Press mixture into prepared pan and top with extra chocolate chips.
- Bake 20 minutes or so (more if using smaller pan), until a toothpick inserted into the center comes out mostly clean.
