Easy Cherry Compote

It’s Cherry Season!!!  I wait ALL year for cherries to be fresh and local in Cali because it is SOOOOO worth it.

We actually have a small cherry tree in the backyard and this year it went CRAZY!  So, instead of the usual cherry recipes we have on rotation (have you tried this amazingly healthy and delicious Cherry Cobbler?), I decided I needed to step up my game.

And so, I decided to make a BUNCH of this Easy Cherry Compote for friends and family, for now and later (it freezes well, y’all).

Is that even a question…? Okay, okay, if you’re wondering why you should spend 20-30 minutes of your life making something so delicious it will blow your mind, I’m gonna lay it all out right here.

Many of us spend a lot of time with the inner turmoil: ice cream or salad? Well, with this recipe, you get both the benefits of using fresh, in-season fruit as well as the sweetness they offer.

Seriously, how many things in your life can be done in 30 minutes (less if you use frozen, pitted cherries)? Usually, we equate fast with low-quality (think “fast food”) that leaves you feeling worse than before you started. But not here! This fast-and-easy recipe will leave you happy inside and out :).

It’s So Versatile!

This compote can be used in soooo many ways, it will make your heart sing! Or your taste buds. From yogurt-granola parfaits to ice cream sundaes, the sky’s the limit! And, at only 62 calories per ¼ cup serving, it is guilt-free, as well.

delicious compote?” Let’s discuss, shall we?

My favorite ways to use Easy Cherry compote:

  • On Waffles. OMG, the first day I made this recipe, we HAD to have waffles to put it on! We drizzled some cashew butter, added a few coconut flakes (some may have added a drizzle or two of chocolate sauce and cacao nibs)…pure heaven.
  • In Yogurt-Granola Parfaits! Don’t worry, my recipe for this is coming SOOOOON. You’re gonna love it.
  • Over Ice Cream. Vanilla, Chocolate, it doesn’t matter. Sheer bliss. Just wait – I have ideas.
  • On Toast, as you would any jammy-type yumminess.
  • In Crêpes. Mais oui! You could not go wrong here.
  • Over cake. YES, cake!!! I have cherry-chocolate cake dreams. It’s happening.
  • On Pancakes. Absolutely. We like ours with nut butter and compote. Kinda like a pancake PB&J.
  • On Scones. This weekend, I’m making these Chocolate Chip Almond Scones just so I can put the compote ON them!!
  • On Oatmeal. Oh, yeah.
  • On a Vegan Cheesecake. Don’t laugh. If you haven’t had a vegan cheesecake (like this Spring Berry Tart), you haven’t lived. Trust me.

Easy Cherry Compote

Instructions

  1. Combine 1/4 cup each of water and maple syrup in a medium pot along with the pinch of salt and bring to a simmer of high heat.
  2. Add cherries and cinnamon, stir, cover, and reduce heat to low. Cook until cherries become soft and start to break down (15-20 mins).
  3. Meanwhile, combine arrowroot and 2 tsps water in a small bowl and stir with a fork until dissolved. Once cherries have started to break down, drizzle in arrowroot and stir constantly until the mixture has thickened (about 5 mins). Remove from heat and stir in vanilla.
  4. Once cooled, transfer to a large jar (or jars) to refrigerate or freeze. If freezing, leave room for the mixture to expand. Enjoy over yogurt, ice cream, on waffles, on toast or just about anywhere!

Notes

  • You can make this year-round with frozen cherries! Just reduce the liquid to 2 TB water and 2 TB maple syrup. Cooking time will only be about 5 minutes.
  • For a thicker compote, dissolve 1 TB arrowroot in 2 TB water and add as directed.
  • Recipe makes about 2.5 cups, so each serving is about 1/4 cup.
